Daniel was chosen by the New York Giants in the third round of the 1999 NFL draft, being the 79th pick overall. In 2000, he started four games and played in Super Bowl XXXV with the Giants.

Later, in 2003, after Bill Parcells became the head coach of the Dallas Cowboys, Campbell became one of the first free agents to join the team. On March 14, 2006, Daniel joined the Detroit Lions as a free agent.

Later, on February 26, 2009, he signed with the New Orleans Saints, where he reunited with head coach Sean Payton. Payton had previously been his offensive coordinator when Campbell played for the Cowboys and the Giants.

Daniel started his coaching career in 2010 when he joined the Miami Dolphins as a coaching intern. In 2011, he was promoted to tight ends coach.

Later, in January 2016, he moved to the New Orleans Saints as their assistant head coach and tight ends coach under head coach Sean Payton. Finally, on January 20, 2021, Campbell became the head coach of the Detroit Lions.
