Jovani was picked by the Minnesota Twins in the 7th round of the 2015 MLB Draft. He was drafted from the Carlos Beltrán Baseball Academy in Florida, Puerto Rico. That same year, he started his pro career with the Gulf Coast Twins.

In 2018, he played for the Cedar Rapids Kernels and the Fort Myers Miracle. In 2019, he played for the Pensacola Blue Wahoos and the Gulf Coast Twins. After the 2019 season, he also played in the Arizona Fall League to continue developing his skills.

Morán started the 2021 season with the Wichita Wind Surge and later moved up to the St. Paul Saints. On September 12, 2021, the Twins called him up to the major leagues, and he made his MLB debut that same night.

In 2023, Morán pitched in 43 games for the Twins, finishing with a 5.31 ERA and 48 strikeouts in 42 1/3 innings. On September 1, 2023, he went on the injured list because of a left forearm strain. Later, on September 24, he was moved to the 60-day injured list, which ended his season.

On November 17, 2023, the Twins decided not to offer him a new contract, making him a free agent. However, three days later, on November 20, he signed a minor league deal to stay with the Twins.
